Deba Hocho - Japanese Chopping Knives

The Nakiri and Kakugata are sharpened on both sides. These knives are made of triple-layered or multi-layered steel. Have a look to our knives made of Damascene steel with 10 layers and more, one of it stainless. You will find you can cut or dice vegetables with ease and accuracy using these knives.

The Usuba is sharpened on one side and made of double-layered steel. Usuba Hochos are heavier than Nakiri Hochos and prefered by professional cooks.

The Deba, the Japanese chopping knife is for chopping herbs and carving meat and poultry. The blade is thick and heavy, and bevelled on one side only. Hard carbon steel and toughened iron have been forge-welded. The polished side of the cutting edge of steel is hollow ground to make the use of hone and strop easier.

Thickness of blade is measured in the middle of the blade back. Usually towards the tang the blade is thicker and towards the tip thinner. Given measurements vary slightly due to the fact, that most knives include a lot of hand work.
