Cladding (Jigane) on both sides is made up of 5 layers of „soft” iron: Suminagashi (Japanese: flowing ink), which resembles the appearance of Damascus steel, encases the cutting core (Hagane) made of Aogami 2, modified Blue Paper Steel with a high hardness of around 63/64 HRC. Although this is not stainless like the cladding layers, it is far less prone to corrosion than White Paper Steel, which is particularly beneficial in the realm of kitchen knives.
The octagonal (Japanese: hakkaku = octagonal) shaped, traditional handle fits very well in the hand and is suitable for both right- and left-handed users. Made from dark walnut, with a ferrule made of light maple, it creates a beautiful contrast between the two woods, which, in combination with the Suminagashi finish of the blade’s cladding, gives these knives a very appealing and elegant appearance.
