We are pleased to introduce these exceptionally beautiful knives to you. The bladesmith Katsuko Tanaka lives and works in Nagasaki Prefecture, somewhat removed from the traditional centers of Japanese bladesmithing. Undoubtedly less influenced by Westernization trends in design and materials that some other Japanese knife manufacturers follow, he adheres to his own traditional line.
The term „Nashiji,” or „pear skin pattern” in English, refers to a technique that gives the blade’s surface a slightly unfinished and rustic appearance. The core of these three-layer blades is made of Aogami No. 1, also known as Blue Paper Steel, which is tough and robust and can be hardened up to HRC 64. This steel core is not stainless and will darken somewhat with extended use, creating a beautiful contrast with the surrounding stainless steel layers.
The octagonal knife handle is made from walnut with an ebony ferrule.
