This knife was long produced by Katsushige Anryu, who, like Hideo Kitaoka and Shiro Kamo, operated his forge in Takefu, Fukui Province.
In addition to his own knife program, Katsushige Anryu produced the Santoku and Nakiri of the "Kitaoka Series."
This knife series is now produced by Shiro Kamo and continues to match the well-known series in construction, appearance, and the materials used.
The outer layers consist of 5 layers of Damascus steel each, and the cutting steel is Hitachi White Steel. The hardness of the knives is over 60 HRC. These knives are not stainless! The handles are made of fine sandalwood, and the ferrule is made of buffalo horn.
