Most closely resembles the Western chef’s knife in form and size.

The knife in this series (Sontoku is the name of this knife series) is made from 3-layered steel. The cutting layer consists of White Paper Steel and is forge-welded with softer layers on both sides.

The blade is forged and only sharpened in the lower area, thus retaining its characteristic forged surface towards the top. The grind itself is very good, making the knife immediately ready for use. The blade is not stainless and should therefore be cleaned and dried as soon as possible after use. The blade thickness is somewhat more substantial compared to other manufacturers, bringing with it more weight. The center of gravity, apart from the Koyanagi, shifts significantly forward.

The bolster is made of plastic, which is common in this price range. The untreated wooden handle has an oval shape and can be comfortably held by both left- and right-handed users.
