These carving knives from Narex are consistently well-crafted and sharp. Many manufacturers have very different interpretations of „sharpness,” and with some, we have to gulp when using this term. But the Narex carving tools are truly sharp.

The blade is polished, as clearly visible in the photos as reflections. Despite the initial sharpness: it never stays that way, and after a certain time, resharpening is necessary. With our Japanese water stones and a bit of practice, this becomes a little meditation in between.

The hardness of the cutting steel is approximately 61 HRC. The handles, made of dark stained and matte lacquered beech, are slightly oval and thus secured against rolling away.
