The carving knives from Narex are consistently well-crafted and sharp. Many manufacturers have very different interpretations of „sharpness,” and with some, we have to take a moment when using this term. But the Narex carving chisels are truly sharp. The blade is polished, as can be clearly seen in the reflections in the photos.
Despite the initial sharpness: it never stays that way, and after a certain period, sharpening is required. With our Japanese water stones and a bit of practice, this becomes a small meditation session in between. The hardness of the cutting steel is approximately 61 HRC.
The handles made from dark stained and matte lacquered beech are slightly oval, preventing them from rolling away.
