On the southern Japanese main island of Kyushu, there are still 2 mining areas for natural sharpening stones. One is located near the volcano Unzen-dake in Nagasaki Prefecture. The other area – not far from there, only separated by the Hayasakiseto Strait – is located on the island of Shimoshima near the city of Amakusa in Kumamoto Prefecture. These sharpening stones are named after their place of origin.
The grit of these natural sharpening stones cannot be precisely defined, so we provide a range that should only be understood as an approximation. All stones are cleanly cut into rectangular shapes. The stone shown may differ in color and structure from the stone delivered, depending on which layer it comes from.
Overall, these stones are affordable and thus a good entry into sharpening with natural stones. These stones are also relatively tolerant regarding the type of steel – both carbon steel and stainless steel blades can be sharpened. The stones on this page all have a medium grit. For honing, a stone with grit 3000 or higher should follow.
Chips or breakages of edges in the range of several mm are normal with these natural stones and should be tolerated; their suitability for sharpening is not impaired. The color naming „white” or „red” is traditionally grown and is actually a trade designation, thus having only limited relation to the actual color.
