Grinding oil is used when sharpening on fine sharpening stones and ensures that metal debris and stone particles do not settle into the pores of the stone. It forms a thin lubricating film on the surface, which makes the grinding process more even, reduces friction, and thus allows for a particularly clean and controlled sharpening result.
Of course, only on stones that can be used with oil. The Japanese/Asian waterstones are NOT suitable for use with oil.
Especially with very fine honing stones, grinding oil supports the formation of a smooth, polished edge and prevents the stone surface from clogging. It also helps to extend the lifespan of the sharpening stone and maintain its grinding effectiveness.
