If you have sharpened knives before, you know how difficult it is to maintain an existing or desired sharpening angle.

This small sharpening aid from NANIWA simply clamps onto the back of the knife. In this way, you achieve the ideal sharpening angle and can maintain it for repeated sharpening processes. Made of plastic with two inserted round ceramic rods that come into direct contact with the sharpening stone during sharpening.

Ensure that the back of the blade touches the base of the clamp; only then is it guaranteed that the knife holds securely and you achieve the same sharpening angle every time. With the sharpening aid attached, guide the knife back and forth over the sharpening stone. Be careful not to move the knife rigidly back and forth but rather turn it slightly with a gentle circular motion, similar to using a hand broom to sweep something onto a dustpan. If you want to sharpen the front area of the blade up to the tip, you need to slightly lift the sharpening aid on one side. This can also be done by gently pressing down the tip of the knife with two fingers, causing the sharpening aid to lift on one side.

Once you have sharpened one side, turn the knife with the sharpening aid and work on the other side. When switching to a finer stone, proceed in the same way. The sharpening aid should be rinsed well after use to prevent scratches on the blade when attaching the next knife.

What sharpening angle do I achieve with this sharpening aid?

The angle is not adjustable and depends on the width of the knife. For a Santoku with a blade width of approximately 45 mm, it is about 12°; for narrower knives with a blade width of, for example, 30 mm, it is about 17°.
