Kirschen carving chisels are factory-ground with a bevel angle of 17°. Such a small bevel angle on a carving tool is only suitable for softwood, such as the linden wood popular for sculpture work. If you use it on even slightly harder woods, the edge may chip, especially if leveraged, which is not always avoidable. For woods harder than linden, even if they are not explicitly designated as hardwoods, like pine, the bevel angle should be increased to at least 22°. For true hardwoods, a bevel angle of 25° or more is recommended. It's not necessary to regrind the entire bevel; the first half millimeter is sufficient, which can be done relatively quickly on a suitable coarse-grit waterstone.
