Kirschen carving tools come with a factory ground angle of 17°. Such a small bevel angle on a carving tool is only suitable for softwoods, such as linden, which is popular for carving work. If you use it on even slightly harder woods, the blade can chip, especially when levering, which cannot always be avoided. For woods harder than linden, even if they are not explicitly classified as hardwoods, such as pine, the bevel angle should be increased to at least 22°. For true hardwoods, a bevel angle of 25° or more is recommended.
