The MORA carving knives from Sweden have had a good reputation for over a hundred years. Aesthetics, steel quality, utility, and last but not least, the price, are well-balanced.
MORA uses different types of steel. Laminated carbon steel consists of three layers: a very hard layer for the edge, hardened to HRC 61, surrounded on both sides by a softer steel. The blade is extremely sharp and retains its edge well, while still being relatively flexible and resistant to breaking. Good sharpenability!
Knife blades made of carbon steel are hardened to HRC 59-60. They are easy to sharpen, but less flexible. Neither type is stainless. You should forgo this feature anyway, as stainless blades are significantly harder to sharpen!
