These elegant kitchen knives come from Seki, Japan, a town known throughout the country for its knifemakers. The outer layers of the blades are in Damascus steel and the grips in practical, stable plastic. The blades are in stainless steel. The layer that makes up the cutting edge is in AUS-8 steel, a stainless alloy made by the Aichi Steel Corportation in Japan. It provides a long-lasting edge, is very tough and break-resistant, and is easy to sharpen. The outer, Damascus steel laminations are in SUS410, which is also a stainless alloy.
