Santoku Hocho, Gyuto Hocho, Santokugata Hocho - Japanese All-Purpose Knives

These all-purpose knives are the closest in shape to the familiar European form. The knives shown here are made of triple-layered steel, some with many layers of damascene steel, and some of them stainless. These knives make it as easy to cut meat into portions as it is to dice vegetables.

Thickness of blade is measured in the middle of the blade back. Usually towards the tang the blade is thicker and towards the tip thinner. Given measurements vary slightly due to the fact, that most knives include a lot of hand work.
