The firm "Kirschen" (Two Cherries), the leading German manufacturer of wood carving tools, exclusively hand-forges its tools of high-carbon specialty tool steel. This elaborate and costly process produces the high quality and long life for which Two Cherries tools are noted. Tools are hardenend to Rc61 and mirror-polished to ease resharpening and honing.

31 designates Series 31 gouges in normal sizes.
29 indicates the internationally recognized sweep/cut number.
12 indicates cutting edge width in millimeters, with the exception of the grooving gouge.
This page shows Series 31 gouges in normal sizes only. Total tool length is generally 24 cm (approx. 9 1/2 in.) to 26 cm (approx. 10 1/2 in.) but some tools with very wide cutting edges may be slightly longer. Tool dimensions are appropriate for their intended uses, consequently, narrow-edged tools are more lightly made and are handier than those with wide cutting edges. Wider tools are also more often used with mallets and are there huskier, to withstand repeated blows of the mallet. The octagonal white beech handles are sized to match the various shapes of the gouges and are capped with metal rings to keep handles from tearing or splitting.
We recommend that the novice begin working with Series 31 gouges and with increasing experience acquire the more specialized tools.
Sweep ("cut") numbers indicate cutting edge profiles. No. 1 sweep indicates a straight cutting edge, No. 3 sweep a lightly curved edge, and No. 11 a strongly "u"-shaped edge. Also available are V-parting tools in sweep numbers 39 through 45, which in the case of these tools indicate "v"-shaped cutting edges in several different angles. In addition to the tools, special tools for very delicate cuts, such as grooving gouges and fishtail gouges, are also available.
Besides sweep/cut numbers, shape of the shank is also significant. Shafts may be straight, as with most gouges, it may be bent over its entire length, or only in the first third of its length. The latter are excellent for hollowing work. Back bent gouges are especially useful in producing convex shapes.
