This chopping knife is for chopping herbs and carving meat and poultry. The blade is thick and heavy, and bevelled on the right side. Hard carbon steel and toughened iron have been forge-welded. The polished side of the cutting edge of steel is hollow ground to make the use of hone and strop easier.
